Maple syrup biscuits

Maple syrup biscuits are similar to usual Christmas biscuits. However, the Canadian variety is sweeter and spicier. Be creative with the decoration of those biscuits.

Ingredients: 120g flour │ 1 tbsp corn starch │ 1 tsp baking powder │ ½ tsp baking soda │ ½ tsp salt │ 120g margarine │ 90g brown sugar │ 2 tbsp maple syrup │ 2 tbsp almond milk │ 1 tsp vanilla extract │ ¼ tsp almond extract

Maple glaze: 240g icing sugar │ 3 tbsp almond milk │ 2 tbsp maple syrup │ ¼ tbsp maple extract

Preparation: Cream the margarine and sugar with a mixer and stir the mixture together with the maple syrup, almond milk, vanilla and almond extract until it becomes creamy. Mix the flour, starch, baking powder, baking soda and salt in another bowl and slowly add to the butter mixture until a soft dough is obtained. Form the dough into a ball, wrap it in cling film and put it in the fridge for 25 minutes. Then divide the dough, press it down into a flat layer and roll it out to 25 mm. Now you can cut out different shapes. Put them for 8 minutes in the preheated oven at 350 degrees. For the maple glaze, mix all ingredients creamy, place the glaze on the biscuits and decorate them as you like.

Ma’amoul

Ma’amoul are traditional Arabic biscuits with a date filling. In Arab countries, such as Syria, Lebanon and Jordan, they are baked at various festive times, e.g. during Ramadan or Christmas. They are usually served with Arabic coffee.

Ingredients: 2 cups soft wheat semolina │ 1 cup flour │ 1TL dry yeast dissolved in 2EL water│1 cup margarine (usually ghee butter) │ 50ml almond milk │ 2EL rose water │ 1 EL orange blossom water

Filling: 125 date paste │2 TL margarine │ 1 pinch of mahlab

Preparation: Mix semolina, flour and margarine and leave it overnight. Add the remaining liquid ingredients and knead. Then form walnut-sized balls. For the filling, melt the butter in a pan, add the date paste and mahlab and mix to an even mass. Then form the date mixture into small balls. Now press a hole in the dough balls, put the date ball inside and close the dough. Finally, you can form a hemisphere with your hands, but preferably with a ma’amoul mold. The biscuits are baked at 250 degrees for about 20 minutes. When they have cooled down, they can still be sprinkled with icing sugar.
